Penkek Pandan aka Malay Flapjack

somehow I believe I am an Ingredient Explorer for such reason. Why do I call myself that. I had a very good experience eating The V's pancake, or rather they called it American Flapjack. wah relly good!!! the texture, the taste and the maple syrup or even with ice-cream scoop, it is wonderfuliccious..!

i made my own flapjack with a twist in the recipe/ingredient. I pu tcake flour instead of normal wheatflour.. put in half a spoon of bicarbonate of soda. then, i put in 3 eggs - small size. pinch of salt. use milk to whisk them together till fluffy. i put in vanilla essence and green colour. the best is to pu in pandan essence, that will be better..

i put into a container and keep it in the fridge. i panned them in the morning..really fabulicious!

sorry no photo, all the freshly panned flapjacks is gone! mebbe tomorrow as I still have half portion left in the fridge. Wait ya..!

Kek Arang @ Charcoal Cake


Hah tu dia... aritu ada makan2 at my place, sempat le steamed this cake... sampai frens kata walaupon rupa tak seindah mana, tapi rasa tetap mabeles...
utk kawan2 yang nak mintak resepi kek arang ku ini.. hamik ni.. heheh
2 cawan tepung gandum
secawan serbuk koko (dark chocolate)
sesudu kecik baking powder
setengah sudu kecik bikarbonate of soda
ayak sumer bahan di atas sekali
telur 5 biji
gula secawan
tepuk gula dgn telur tu sampai sebati
masukkan 3/4 cawan susu pekat
masukkan pulak air suam secawan
tepuk lagi (i pakai whisk tu je - hand held ok..)
masukkan adunan yg dah diayak.. gaul sebati
lastly masukkan minyak masak 3/4 cawan... gaul sebati..
kukuskan....
tu dia tgk how fluffy....!!
my kids? huh, tu dia dipotong time panas2 lagi....still berebut!

Ikan Pari Asam Pedas dan Sup Ayam

Owh rupanya si anak dara ku itu mmg suka asam pedas mamanya ni...mama dah masak sup ayam awal2, tapi kaka tetap nak tunggu asam pedas mereneh sampai masak..

cam biasa, every sunday now other half kena pegi pasar tuk his kantin...so dia beli lauk for us sekali..jimat masa mama ke pasar..sementara tunggu ayah balik, he left ard 5am..called me up ard 9am, tanya tu ni...bersalah gamaknya left us all kat umah on a very beautiful Sunday, so mama yang dah lama tak berkecil hati ni...siapkan every chores kat umah - purposely left mopping and vacuuming to him later -lol!

by 11 am, mama dah siap kat bawah...so naik atas mula masak, while Angah layan Adha main PS, kakak layan Emir to do whatever..

ikan pari mmg dah siap siang awal2...basuh dgn garam n rendam dgn air asam siap2... sambil2 tu, renehkan ayam+kentang+carrot+celery....buh halia n bawang putih ketuk sikit....

dalam blender, kisar cili bih, kunyit hidup, bawang besar satu setengah labu, halia seinci, bawang putih 4 ulas.. masukkan sikit ikan bilis + lada hitam setengah sudu kecik... tumiskan dalam minyak setengah cawan yg dipanaskan.... pastu...masak sampai garing, buh garam n serbuk perasa...buh ikan pari n air asam....renehkan samapi ikan masak....

by this time sup mama dah empuk, masukkan rempah sup....masukkan pulak garam perasa n lada sulah....

pastu ambik rempah sup 4 beradik, panaskan dalam kuali...campak dalam kuah sup...! pastu buh bawang goreng...

siap dah lunch kita ye anak2....tup2 other half balik tengah2 mama masak tadi...terus suruh dia makan...hmm..dia pun kata, nasib baik ayah tak makan kat luar tadi..dah agak mesti mama dah masak...:)

paling best bila mama suapkan anak2 jantan makan...selonggok je sumer org depan mama dgn mulut ternganga..! best moment u oll!

Home-Made IceCream

oh jangan salah paham..lum buat lagi...tapi ONE DAY..ONE DAY...ONE FINE DAY...akan ku buat juga......tunggu...

Recipe from Desserts for Beginners by Peggy Wong

180 grams fresh mango puree
60 grams sugar
2 egg yolks
120 grams whipping cream
60 grams milk
1/2 tsp lemon juice
I added some mango pieces

* Whisk egg yolks and sugar until pale yellow .
* Heat milk in a pan until warm ; pour half of the hot milk into the egg yolks , whisking as you add to prevent curdling . Return the mixture to the saucepan and stir with wooden spoon until thickened . Set aside to cool .
* Mix lemon juice to mango puree and fold this to the egg mixture . Cool completely and put into the fridge to chill .
* Add the whipping cream to the cold egg mixture , mix until well combined and pour into the ice cream maker ; spin until thick and creamy . Transfer into ice cream container and layer some mango pieces and freeze until firm , about 4 hours or overnight

*** If you're not using an ice cream maker , use handheld mixer to beat the whipping cream until stiff and fold this to the cold mixture into two portions . Freeze mixture for an hour until half frozen ; then scrape the mixture and beat using a handheld mixer , in high-speed , until smooth but not melted . Repeat this 2-3 times to improve texture ; then freeze until firm .
